To celebrate Cinco de Mayo, we put together a simple but surefire menu that will turn your regular Tuesday dinner into a fiesta!

Guacamole

A good party starts with guacamole.  For something different, try adding mango and pomegranate seeds like A Cup of Jo suggests.  If you only have time to pick up, we love the freshly made guacamole in the produce section at Whole Foods.  It has just enough kick.  Throw in a bag or two of tortilla chips and you’re all set.

Taco Bar

Setting up a taco bar is fun and easy.  We love the Tacolicious Guajillo Braising Sauce from Williams-Sonoma.  Not only is it from one of our favorite taco joints, but we can let it cook while we’re away.  Just add short ribs and the sauce to your slow cooker and set it before you go to work in the morning.  The tender, slightly spicy meat will be ready when you arrive home.  Simply chop up some cilantro, onion, radish and scoop them onto corn tortillas for an easy taco bar.

Margaritas

It wouldn’t be a fiesta without margaritas!  We’re big fans of adding St. Germain to any drink, so we love the idea of mixing it into margaritas.  This St. Germain Mint Margarita courtesy of Waiting on Martha is a nice twist on the classic refresher, and looks beautiful too.

Churros Bites with Dulce de Leche Dipping Sauce

Last, but never least, is dessert.  We love this combination of the traditional churros (usually served with chocolate) and tres leche cake in one dessert:  churros with dulce de leche dipping sauce (recipe here).   Delicioso!
